School Lunch {Teacher Style}


Friends, this post is dedicated to school lunches.  Not the actual cafeteria lunches, but YOUR school lunches.  I would like to start saving money by bringing my own lunch, but I have a slight problem: I'm lazy.  It's hard to believe, I know, but it is true.  I'm lazy.  Not only that, I'm single, so it's hard for me to cook actual meals.  I know many of you probably bring leftovers for lunch.  Usually, if I cook, I'll put a frozen fish filet in the oven and cook a box of rice-a-roni.  I also would like to start eating slightly healthier.  My brother's lady friend is going vegan for a month.  That's not going to happen for me, but it did get me thinking about eating more vegetables.  I'm not really into fruits.  So my challenge to you: give me some ideas for CHEAP, QUICK, EASY, and HEALTHY lunches for school.

I should probably make this a linky, but the last time I tried that, I failed miserably.

  1. I like to make big salads to take with me for lunch. A couple favorites:
    Healthier Mexican salad with romaine, grilled seasoned chicken, black beans, corn salsa, tomatoes, avocados, a little Mexican cheese blend, salsa, and low fat sour cream topped with crumbled Baked Tostitos.

    I also make one with romaine, grilled chicken, strawberries, blueberries, walnuts, feta cheese, and raspberry vinaigrette dressing.

    Besides salads, sometimes I just take a turkey sandwich with sides of cottage cheese and sliced fruit. To save time, I usually pack my lunches the night before and then I don't have to worry about them in the morning.

  2. No. 1: I want to hear about Les Mis! And No. 2: I'm also lazy...but terribly picky, so I bring my lunch every. single. day. {and have my whole life!} So I make it really easy on myself...I pack an apple, a jar of peanut butter, a bag of nuts, half an avocado with a wheat tortilla...just basically anything that requires little more than putting it in a bag. :)

    1. Those are good ideas, Katie! By the way, I accidentally dropped an avocado on the floor the other night, and it ended up being the best, creamiest avocado I've ever had. I might be on to something there... :)

      I also have another problem... I'm a terrible shopper! I never seem able to buy more than I can think to eat within the next few days... and I'm not a meal planner. Oh the single life...
